Oatmeal Carmelitas

(Recipe from Carol Ann Mills, NC)


  • 1 cup all purpose flour

  • 1 cup quick cooking oats

  • 3/4cup firmly packed brown sugar

  • 1/2 teaspoon soda

  • 1/4 teaspoon salt

  • 3/4 cup margarine, melted

  • 3 tablespoon flour

  • 1 cup choclate chips

  • 1/2 cup chopped nuts

  • 3/4 cup caramel ice cream topping


Combine flour, oats, brown sugar, soda, salt and melted margarine. Blend well at low speed to form crumbs. Press half of the crumbs into bottom of a 11 x 7 inch pan. Bake at 350 degrees for 10 minutes. Sprinkle with chocolate chips and nuts. Blend caramel topping with the 3 tablespoons flour: pour over chocolate and nuts to cover. Sprinkle with remaining crumbs and bake for 20 - 25 minutes.
