Tarts Cookies
This was a favorite
of mine growing up and I couldn’t wait until my mom made these
each year at Christmas time. My mom would use colored sugar to
decorate and some she added a walnut in the center of the cookie.
Oh, the walnut topped ones were the best!

Cups (4 sticks) butter, softened

Cup Sugar

Egg

Vanilla

Sifted All Purpose Flour

Cup Pecans, finely chopped

- Preheat
oven to 350 degrees.
- Beat
butter with the 1-cup sugar and the egg in a large bowl
until light and fluffy. Beat in vanilla. Stir in flour and
nuts, blending well to make a stiff dough. Gather into a
ball.
- Roll
dough one-quarter at a time to a slightly more then a ¼”
on a lightly floured surface with a lightly floured
rolling pin. Cut into rounds with a 1 ½”
scalloped or round cookie cutter. Or use different shaped
cookie cutters.
- Place
dough 1” apart on an ungreased cookie sheet. Re-roll
trimmings and cut out again.
- Bake
in a preheated oven at 350 degrees for 15 minutes or until
bottoms of cookies are lightly browned and edges of
cookies just begin to brown.
- Roll
warm cookies in remaining ¼
cup
sugar. Add a walnut in center if desired.
- Place
cookies on wire rack to cool thoroughly.
Store
in airtight container.
Makes
11 Dozen Cookies.
