Sand Tarts Cookies

This was a favorite of mine growing up and I couldn’t wait until my mom made these each year at Christmas time. My mom would use colored sugar to decorate and some she added a walnut in the center of the cookie. Oh, the walnut topped ones were the best!

2 Cups (4 sticks) butter, softened

1 Cup Sugar

1 Egg

1 ½ Teaspoon Vanilla


4 ½ Cups Sifted All Purpose Flour

1 ½ Cup Pecans, finely chopped

¼ Cup Sugar

  1. Preheat oven to 350 degrees.
  2. Beat butter with the 1-cup sugar and the egg in a large bowl until light and fluffy. Beat in vanilla. Stir in flour and nuts, blending well to make a stiff dough. Gather into a ball.
  3. Roll dough one-quarter at a time to a slightly more then a ¼” on a lightly floured surface with a lightly floured rolling pin. Cut into rounds with a 1 ½” scalloped or round cookie cutter. Or use different shaped cookie cutters.
  4. Place dough 1” apart on an ungreased cookie sheet. Re-roll trimmings and cut out again.
  5. Bake in a preheated oven at 350 degrees for 15 minutes or until bottoms of cookies are lightly browned and edges of cookies just begin to brown.
  6. Roll warm cookies in remaining ¼ cup sugar. Add a walnut in center if desired.
  7. Place cookies on wire rack to cool thoroughly.

Store in airtight container.

Makes 11 Dozen Cookies.
