Beef and Onion Stew

2 pounds lean beef
2 to 3 tablespoons olive oil
2 clove garlic, crushed
2 bay leaves
1 tablespoon wine vinegar
4 ounces good quality red wine
Salt and pepper to taste
2 cans (12 ounces) boiled small white onions
  • Sauté the beef in olive oil. 

  • Add garlic, bay leaves, wine vinegar, wine and salt and pepper. 

  • Add enough water to cover. 

  • Cover and simmer for 11/2 to 2 hours, add more water, if necessary. 

  • When stew is ready to serve, add the onions and heat thoroughly. 

  • Serve over rice. 

  • Makes4 to 6 servings.
