Ham & Potato Chowder

  • 4 potatoes - peeled & diced
  • 2 tablespoons butter
  • 1/4 cup sliced green onion
  • 1/2 cup chopped green pepper
  • 2 1/3 cups water
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika
  •  tablespoons flour
  • 2 cups milk
  • 1 12 ounce can whole kerrnel corn (do not drain)
  • 2 cups diced cooked ham
  • chopped parsley

 

  1. In a large dutch oven melt butter. 
  2. Add onion and green pepper and cook until tender. 
  3. Add potatoes and 2 cups water.
  4. Add seasonings.
  5. Simmer until potatoes are tender. 
  6. Make paste of flour and 1/3 cup water. Add to potato mixture. 
  7. Add milk and cook until slightly thickened. 
  8. Stir in undrained corn and diced ham. 
  9. Heat and serve.

    Makes 6 servings.
